Things to think about...

As of late, I have been quite obsessed with wedding planning. Yes I know, we don't have a date but I'm in love with the planning process. And as of late I've been thinking of Save the Dates. Yes!!! Save the dates are an awesome way to let you guest know to save your wedding date in the future.

There are so many great ideas and designs out there to chooses from. Anything from your standard invitation like save the dates to something more fun and interactive.

I know, I know. I haven't been on lately. Due to work and my motherly duties, I haven't had the time to make posts. But now I'm back and hopefully posting on a regular basis.

My real reason for blogging today is because I'm considering joining the vlogging society. What is vlogging? When you take you normal blogging experince and put into video, mainly speaking to your audiance and allowing them to see you pretty little face, it's called vlogging.

Update On My Life

As I sit here, listening to Seether while the hubby is playing his game, I can now confidently say that I Have A Job. That's right, I joined the tax payer's society. Where at? Back at the old job. It seems that when I gave them my application, they were dying to have me back even though they told me during the interview that they didn't have a opening for the shift I wanted. Well I guess it's easier to hire someone who already knows what they're doing. And I got a great bonus today. Free ham and pie for Easter. Yum yum.

Also to let everyone know, even though a date still isn't set, I'm wedding planning again. That's right. My working has now given me the opportunity to finally plan my freakn wedding. Work = money = wedding. Once I have a date set I will blogging about it. Nothing better then peaking into my head about the insanity that is me wedding planning.

We everyone, wish me luck on my new ventures in life.

Unfortunately I still don't have a job. But I have been a busy little bee. Thanks to Thanks To You For Giving,  I am quite grateful though. Keeps me busy and away from my cabin fever. Plus, I get to go out to cool events to talk to vendors. I mean look what I got from my first event.

Green Cake For a St. Patrick's Birthday

Finally I can put this up without worrying about my mother-in law.

For my mother-in laws birthday I made her a cake. A green cake with irish cream butter cream filling. Yum Yum. Now I was afraid that I put too much of the irish cream into the cake but it actually came out pretty good. Every cake is a work in progress though but I'm glad she enjoyed it. So today begins my one cake a day fun. What this means is that for three days I'm going to me making three different cakes all for the sake of charity. I originally was going to make cake pops but decided to just make them into balls. Same concept as the pops just without the lollipop stick. Yummy!

New Hair, New Self

So I've been in kind of a slump when it came to my hair. My hair is course and easily tangles and if not managed right, becomes very dry. Well today I went to my local braiding salon and got micro braids with open ends. I love it. It's been awhile since I have had braids and never have I had micros or in this style, but I abosolutely love them.


Next time I'm getting some purple put in.

Fun At A Meeting

So for those who do not know, I am a member of an organization called Thank To You For Giving. We fundraise for cancer and are apart of the LLS (The Leukemia & Lymphoma Society) New Jersey chapter. I'm not going to get into full detail about the organization. Just know that we fundraise for a good cause.

Last night was our meeting and the first meeting I have been involed with. I must say it was fun. It was great to actually get out of the house without the baby or hubby. And I made some awesome low calorie cupcakes for the meeting. I know, I have too much time on my hands. Here's the recipe for those who would love to try them.

Xin Nian Kuai Le


First off, spite popular belief I am not chinese nor do I have any asian background that I know off.

So yes its the year of the Hare in the Chinese calender. I love this time of year. The parades with dragons running around, red envelopes handed out, the colors. Now I've never been to any of the events but I so want to go. Hopefully we can take the little boy to China Town. I would love for him to experience the richness and pride of the chinese culture.

So today, be merry and say to your neighbor Xin Nian Kuai Le or Gung Hay Fat Choy if you want to be polite.

OMG!!! Coffee Filter Flowers!!!

I love reading other blogs. Especially wedding blogs. Lately I've come across Broke-Ass Bride. For those of you who don't know what this site is about, It's a place for brides who want to make the most of there creativity and save money on their wedding. A really great site.

So I was browsing their facebook page and came across a link for diy coffee filter carnations. I am in love. It seems so easy and you seem to have so much more control over the color you want. Now I have thought about making carnations out of tissue for my wedding. Let me change that. I was planning on doing tissue paper flowers but it's hard to find the color you want since they come in certain colors. With the coffee filter flowers all you need to do is use water color paints to get the color you want. Plus tosser paper can add up since you only get so much in a pack. You can go to Sam's Club or Bj's and buy the amount you need for less. Along with that, the flower look so much fuller then tissue and less delicate.

These things are gorgeous. I can't wait to try theses myself.

Time For A Diet!!! And Pineapple-Glazed Pork Chops!!!

Finally. Life without access to a computer is the worst. But now I'm back.

So to update on my life. Computer broke and it took 2 weeks to get it fixed, my son is now trying to run away when he has something he knows he's not suppose to have, and I have decided to go on a diet. That's right, anti diet is going on a diet. My reason is my back pain which is caused by my large ta-tas. I'm not stranger to back pain. I was 115lbs with DD cup size. Now I'm 153lbs with DDD breast. Damn pregnancy made me grow. It's truly needed though. So as of  today, I'm stating my "Get back into shape and make my boobs go away so I don't have to have surgery" diet.

So what was the first day of my diet like. None eventful. I took care of my son, slept when he went down, and made a delicious dinner. Thankfully the food was low in calories. I believe no more then 530, but then I don't count my calories. So for a while I will be blogging about my dieting and seeing how much weight I can lose. Wish me luck.



And just to add, this is the recipe for Pineapple-Glazed Pork Chops. It is only 226 calories and if you are following Weight Watches, is only 5 points.

4 (4-ounces) lean boneless pork loin chops, trimmed
1/4 teaspoon salt
1/4 teaspoon ground pepper
Vegetable cooking spray
1 (6-ounce) can unsweetened pineapple juice
2 tablespoons brown sugar
1 teaspoon dried crushed rosemary
1/4 teaspoon garlic powder

Flatten the pork with the palm of your hand slightly then sprinkle salt and pepper.

Coat a larger skillet with cooking spray and place over high heat until hot. (Now do not add too much of the cooking spray. Though they are a great alternative to using oils which can add up in calories, using too much of the spray can do the same.) Add your chops, cooking them 1 minute on each side until browned. Reduce heat to medium and continue to cook another 4 minutes on each side or until they are done. Remove them from the skillet and set aside but keep them warm.

Add the pineapple juice, brown sugar, rosemary, and garlic powder to the skillet and stir well. Cook over high heat, stirring constantly as you scrape particles that stuck to the bottom of the pan. Cook for 5 minutes or until the mixture thickens.

Return the chops to the skillet, turning to coat with the glaze. (Now what I did differently is I added the chops back in the skillet and placed the lid over it. This allowed some of the flavor to penetrate the meat. But you can do what you wish) Serve.

Serve this with couscous and baby carrots.

The recipe also calls for 2 tablespoons dry sherry that is to be added to the juice mixture. It is actually an optional ingredient, but trust me you won't miss it.

I'm telling you this meal is divine. You will be thanking me when you try this.

Offbeat Me? What's That About?

I guess it's about time I explain what Offbeat Me is about. Or going to be about. Hopefully.

Being offbeat can mean many things. From the fact that doing things a little differently from others to you yourself are complete different. Universally offbeat means being unconventional, eclectic or eccentric, quirky, unusual. No matter what, you go against the grain of whats considered normally cookie cutter. What does this mean? Well think about it. What is considered normal in modern  society? Normal clothing, normal music selection, how much your suppose to weight. Bawh. If you're like me you probably love being different. Heavy metal music amongst others, shopping at other places besides Hot Topic, tattooed and pierced, though I'm personally not fully; bold color in your hair. There are so many other things that can make u much different then the norm.

Just to give you a little more of an idea who I am, besides what is on my About Me. I've gone through my phases. What person hasn't. I was a goth at one point and a hippie another. Now its kinda funny since I seem to be more of a combination of all of them and yet just myself. Now I'm an Offbeat mama with the love of all types of cultures and scenes. With that I love all types of music from industrial, which i got from my goth days; to indian folk music. My current obsessions being yoga, cooking, eroticise (which is nothing more then erotic style exercising like burlesque, pole dancing, and dancing with stilettos on), shopping for that perfect dress. Along with me being a mama, I'm also engaged. So as I plan the event I hope to be able to share my process with you. My fiance is a great man and father to our 1 year old son, and is also quite an offbeat person himself. Maybe I can even get him to blog along with me.

All in all, this blog is a way for me to chronicle my life in the offbeat. As a mom, a bride and wife to be, and whatever else tickles my fancy.

My Baby Is 1!!!



It's amazing to know that my son is now 1 years old. It seemed like yesterday he was just learning to crawl and the day before that he was smiling and giggling for the first time. Yet its kind surprising how indifferent I feel bout it. Not saying I don't care, I mean it's my child and I'm happy that he's hit that toddler mark. At the same time I don't care. You see, I send all my time with my son since I'm a stay at home mom, but I just don't get that big "Oh My God you're 1" feeling that you think that your suppose to get. I didn't get him a cake nor was I planning on doing a party, whether it was with family or not. I guess I just don't see the what the big deal is. My son doesn't like me to leave his veiw, he doesn't like a lot of noise, or a lot of people around. If I was gonna do something, I wanted him to enjoy himself. Not scream his head off and attach himself to my hip. So my idea was to wait till next year. Hopefully he would be able to particicipate more, run around and sing, and just enjoy being 2. Along with hopefully we (me and his father) would be in such a rut with our finances, among other thing.


Well I kinda didn't have a chose in the matter though. Thanks to my lovely sister in law, she went out and bought him a big cupcake cake and a number 1 candle. I'm not mad about it at all. If we were gonna celebrate his birthday this was how I wanted. Me and his father, his aunts and uncle, and the grandparents. More then that and it would be more of a party in which I would have felt that I needed to provide food and beverages. Now mind you, this is my fiance's family so they would of provided everything. but I see them as guest when it comes to these type of events and I would like to be the hostess which means I cook and clean, etc. It's just how I feel.


Well anyway. Everything worked out great and my son loved the cake. Also the sugar high he got afterwards while I gave him a bath. And I think he may still have a slight high today. All in all, I love my son and I'm glad he had a good birthday.


Now to start planning next year properly.
